SALAME CIAUSCOLO
Prepared with meat coming from bacon,
from pork chop and from the shoulder and together with fat,
flavoured with salt, pepper, garlic and wine. Well ground by
a little die-plate, it is kneaded and made into sausages in
a "gentle" bowel. To use prevailingly fresh; for his
kneading softness and delicacy it is compared with the French
tradition of patés to spread on a slice of bread.
